Walter’s German Potato Salad

German potato salad reminds Walter of the time he lived in Germany. Memories of his time there inspired him to combine the perfect combination of ingredients based on these memories to make his own version of a German potato salad. He made this recipe a few years back out of deep craving for the flavors of Germany. Last night we made it for dinner to go with some grilled brats! It was delicious and I had to share it with everyone!

So make this up and grill some sausages and chow down! Enjoy it and make sure it is still warm. It’s so good warm!

Walter’s German Potato Salad

Ingredients:
4 large baking potatoes
6 slices of bacon
1 tablespoon flour
2 tablespoons sugar
⅓ cup water
½ cup white wine vinegar
¼ cup chopped scallions
salt and pepper to taste

German Potato Salad-3

Directions:

Cut potatoes into medium large pieces. Bring a large pot of water to a boil. Add potatoes and boil until tender but still slightly firm. Drain and set aside.

Chop up bacon. Cook in a deep skillet until crisp. Add bacon to the potatoes reserving the bacon fat in the pan.

Heat up the bacon fat and add flour to make a roux. Add water, vinegar and sugar. Whisk until slightly thick but still a consistency of a dressing.

Add scallions to bacon and potatoes. Pour dressing over and mix together well. 

Serve warm.
