The Pickle Back Cocktail

I had a desire to make a cocktail. Well, one of my co-workers came up with the idea actually. She said, “I think Oinkcooking needs a cocktail! You should infuse something with bacon!” Well, I am always up for suggestions and I had just bought a thing of bourbon so I thought, “Why not?!”

Infusing the bourbon was the easy part. Coming up with something special to do with it was more difficult. While I enjoy craft cocktails, I am not a mixologist; that is when I enlisted the help of my buddy Wade! He is the one that came up with this truly fabulous cocktail!

I was scared at first. When he said pickle juice with the bacon infused bourbon I was honestly skeptical — afraid actually, but I believe in Wade’s talents so was ready to roll with it! His inspiration came from a current trend of taking a shot of pickle juice after a shot of whiskey — so the name “Pickle Back” is what we are calling this!

The Pickle Back

Ingredients:

1 1/2 ounce bacon infused bourbon  
1 1/2 ounce pickle juice (homemade is best)  
 pickle slice for garnish  
1 slice bacon  
 sea salt  
 lime juice to help rim the glass

Directions:

Follow this link to make the Bacon Infused Bourbon.

For bacon salt rim:
Cook up one slice of bacon and mince. Spread out on pan and place in 400° oven to dry even more and become crisper. Pour in about 2 – 3 tablespoons of salt and blend well with bacon.

Dip rim of glass into lime juice then dip into bacon salt mixture.

Add bacon infused bourbon and pickle juice into cocktail shaker filled with ice. Shake well. pour into bacon salt rimmed glass. Garnish with pickle slice.
