At the store this weekend they had these beautiful skirt steaks. Even better is that they were on sale. I had to buy one. The butcher was awesome and even trimmed it all up for me (so worth having them do it there for you — it’ll save you a lot of time). I initially bought it to make some awesome tacos with, but instead I decided to through a different marinade together. I am so glad that I did!. This skirt steak on the grill turned out so amazing!
My buddy Eli text me a few weeks ago and said “Let’s make carnitas!” I am never one to turn down cooking with friends especially something like carnitas. We combined our knowledge and looked over many other recipes and put together what we thought were some pretty awesome flavors. SUCCESS!

Just in time for TACO TUESDAY tomorrow! So this recipe was a total accident, and here is the story behind it. We had just moved to Austin. I had a temp job, Walter hadn’t found anything at that point. Honestly, we were poor! The money we saved up for the move was running out and payday was almost a week away.
