When deciding what to make this week for the blog, I found this ragu in my notes. It literally said, “Made the most awesome ragu tonight! eggplant, carrots, onion, garlic, zucchini, summer squash, kalamata olives, tomato paste, beef.” That’s what I had to go on and i wrote it down about 3 years ago. With a note like that, I had to make it…and make a recipe for it!
I have been craving cake all week. Store cupcakes didn’t cut it. Then the other day my friend posted a picture of this peach upside down cake. I was salivating and immediately messaged him for the recipe. He sent me his inspiration from the Toronto Star. He said he used a store bought yellow cake instead of making one from scratch like the recipe said to. It’s TOMATO SEASON people! Tomato salad is my favorite summer side! I love this time of year and if you’ve been to our Instagram, you know we are using our own tomatoes from our little garden space. We are getting a lot and have 6 kinds of tomato we are growing! So enough about my love of tomatoes…let’s talk TOMATO SALAD.
I love rosemary and garlic combined with pork. In these rosemary pork skewers I added the sweetness of honey too. I found the honey left a nice caramelization on the meat when it cooked. Trust me, the chicken ones from last week were good and preferred at dinner by over half the guests, but these pork ones were preferred by me and a few others. Maybe it’s because it’s pork. Maybe it was the flavors. I’m really believing that it’s both things!
