I had bought some eggplant the other day to make some baba ganoush. I never did, so I needed to use it up. I first roasted up the eggplant earlier in the day and when it came time to do something with it I came up with this beef and eggplant casserole.
When I was making my Peruvian Style Chicken with Green Sauce I needed a side. My friend who was our guinea pig for the night had bought some poblano peppers at the farmers market and wanted to know if I could use them for dinner. I thought for a second how good those would be roasted but what to do with them. I dawned on me that they would be great added to mashed potatoes and garnished with cheese!
I was working last week and it was around lunchtime and I smelled the most amazing thing. I turned around and a co-worker from India was eating this sandwich. German potato salad reminds Walter of the time he lived in Germany. Memories of his time there inspired him to combine the perfect combination of ingredients based on these memories to make his own version of a German potato salad. He made this recipe a few years back out of deep craving for the flavors of Germany. Last night we made it for dinner to go with some grilled brats! It was delicious and I had to share it with everyone!
