I was a the market the other day and grabbed some cremini mushrooms. I was craving some mushroom soup so decided I was going to make some. There is something about the earthiness of mushroom soup and the way it fills and warms your body. I was having an inspiring Sunday afternoon and wanted something for lunch other than left over pizza. So I dug through the pantry to see what I had to be able to make this work.
I saw these portobellos at the store and thought it might be fun to make “burgers” out of them. I had a better idea for them than grilling them into a burger. I stuffed them instead WITH ONLY 4 INGREDIENTS!
I love stuffing a pork loin. Some will say it is outdated and from the 80’s, but what’s wrong with that? I think they are delicious and present well when having people over for dinner, and when seasoned well, can be full of amazing flavors. So I did it. I make one, like I have so many times before.
