I was sitting at work the other day dreaming of what to make for dinner. It was chilly and rainy out, a perfect night for a hearty soup — a Meatball Soup! I had a small pork butt in the refrigerator I needed to use so I figured it would be perfect to grind up and make meatballs with. I love things on a bun. I had this idea a few months ago and am finally getting around to it. I was tempted to use my regular meatball recipe I shared back in February, but it just didn’t seem right for these. You can use that one if you want, but I made up this combination specifically for sliders.
Who doesn’t like good meatballs? I think most of you have never had one like these. I know I never had before I discovered this! I adapted this meatball recipe from one I saw in a book called The Food of Italy by Sophie Braimbridge. This book is amazing and I highly recommend it if you love Italian food!
