I was a the market the other day and grabbed some cremini mushrooms. I was craving some mushroom soup so decided I was going to make some. There is something about the earthiness of mushroom soup and the way it fills and warms your body. I was having an inspiring Sunday afternoon and wanted something for lunch other than left over pizza. So I dug through the pantry to see what I had to be able to make this work.

The Ultimate Ragu

When deciding what to make this week for the blog, I found this ragu in my notes. It literally said, “Made the most awesome ragu tonight! eggplant, carrots, onion, garlic, zucchini, summer squash, kalamata olives, tomato paste, beef.” That’s what I had to go on and i wrote it down about 3 years ago. Indian Butter Eggplant (Nethi Vankaya)

Here’s another Indian recipe from a co-worker, Butter Eggplant. She brought this in for work for lunch one day. I asked what it was and she told me. Indian Style Mashed Potato Sandwich

I was working last week and it was around lunchtime and I smelled the most amazing thing. I turned around and a co-worker from India was eating this sandwich. I inquired on what it was, knowing she was vegetarian, and was told it was a mashed potato sandwich. I was intrigued.
