We had a friend over for dinner the other night. He was going to bring the side. I was cool with that, but he text that he was still at work and didn’t do anything for the side. I told him not to worry, I’d come up with something. Since we were grilling chicken, I thought a summery salad would be nice. I saw these portobellos at the store and thought it might be fun to make “burgers” out of them. I had a better idea for them than grilling them into a burger. I stuffed them instead WITH ONLY 4 INGREDIENTS!
In my early 20’s I lived in Slovenia. Since I am a big meat eater, some of my favorite food to go get was Serbian grilled meats. Cevapi (che-va-pee), also known as cevapcici (che-vap-chee-chee), were some of my favorite things to eat. They are like little sausage finger that are full of flavor.
It’s grilling season! I am so excited about that! I love the flavors that come from a grill whether it be meat or veggies. These grilled marinated chicken leg quarters are so good! But make sure that you let the marinade soak in long enough! PLAN A DAY AHEAD! Seriously. It will make a difference in the flavor.
