I saw these portobellos at the store and thought it might be fun to make “burgers” out of them. I had a better idea for them than grilling them into a burger. I stuffed them instead WITH ONLY 4 INGREDIENTS!
Who doesn’t like good meatballs? I think most of you have never had one like these. I know I never had before I discovered this! I adapted this meatball recipe from one I saw in a book called The Food of Italy by Sophie Braimbridge. This book is amazing and I highly recommend it if you love Italian food!
We’d never had farro before, or even heard of it, before we sat at a restaurant in Lucca, Italy. Osteria del Neni was the place that introduced us to this dish, and I am so grateful they did! Who knew this ancient grain was so delicious and nutty flavored and that once you add some salty bacon and the bite of Gorgonzola cheese this grain becomes an amazing dish!
