In efforts to diversify the recipes on Oinkcooking, I begged for ideas from my friends on what to include. There were quite a few requests for desserts. I am not a baker (I think I have mentioned that before). Baking and I don’t tend to get along. I can do simple cookies and cakes, but get more technical and I am ready to head to the bakery to get what I need instead. That’s why I love my mom’s Texas Sheet Cake recipe! It is easy…like SUPER EASY!
I’ve been obsessed with avocado toast. I’ve been eating it for breakfast at least 5 times a week for the last month and a half. Why? Because it is freaking DELICIOUS! Plus, I feel a little healthy when I eat it. I usually have it with eggs of some sort — scrambled or fried. I even decided that for work I could bring boiled eggs to enjoy with it.
We belonged to a CSA (Community Supported Agriculture) when we lived in Austin. At one point of the year, we got a TON of zucchini! I didn’t know what do with it. I just has so much! It was then I created this casserole. I know, I know. Casserole is something mom used to make in the 80’s. But trust me, this isn’t like her’s…there is not Campbell’s Soup used in this!
