When I was making my Peruvian Style Chicken with Green Sauce I needed a side. My friend who was our guinea pig for the night had bought some poblano peppers at the farmers market and wanted to know if I could use them for dinner. Salsa chicken is what you end up with when you buy some green salsa at the store that was just a little bit too hot for you to eat with chips. It’s true! Last weekend was “Family Dinner” with some friends. It’s where we get together, cook, eat, have some wine and wind down from the week. It was so hot out I didn’t want to cook in the house, so opted for the grill. I made 2 kinds of skewers. This one was the favorite. The marinated lemon chicken skewers are marinated in some delicious and simple ingredients.
