It’s soup season and the cold weather always makes me want comfort food. I grew up on this soup. It was passed down from my Great Aunt Lodema and my mom made it many times each winter. It makes the house smell wonderful and your insides nice and warm.
When deciding what to make this week for the blog, I found this ragu in my notes. It literally said, “Made the most awesome ragu tonight! eggplant, carrots, onion, garlic, zucchini, summer squash, kalamata olives, tomato paste, beef.” That’s what I had to go on and i wrote it down about 3 years ago. With a note like that, I had to make it…and make a recipe for it!
I had a craving for some egg rolls. I bought some wrappers some time ago and found them in the freezer the other day so figured it was a sign to make these! I wasn’t quite sure what I was going to put in them, so I thought of all the best flavors I’d had in egg rolls and what sounded good to my palate and came up with these. Simple, tasty, and only a few ingredients; just how I like to cook!
I love one pot meals. They are easy to prepare, easy to clean up, and require very little attention once you start cooking them. I came up with this red wine chicken a few years ago in an effort to make healthy and inexpensive meals.
