Mushroom Soup

I was a the market the other day and grabbed some cremini mushrooms. I was craving some mushroom soup so decided I was going to make some. There is something about the earthiness of mushroom soup and the way it fills and warms your body. I was having an inspiring Sunday afternoon and wanted something for lunch other than left over pizza. So I dug through the pantry to see what I had to be able to make this work.

Indian Style Mashed Potato Sandwich

I was working last week and it was around lunchtime and I smelled the most amazing thing. I turned around and a co-worker from India was eating this sandwich. I inquired on what it was, knowing she was vegetarian, and was told it was a mashed potato sandwich. I was intrigued. Avocado Toast

I’ve been obsessed with avocado toast. I’ve been eating it for breakfast at least 5 times a week for the last month and a half. Why? Because it is freaking DELICIOUS!
