Sweet Pork Barbacoa Burrito Bowl

It’s been hot in Chicago the last few weeks. So hot that I have been trying to not heat up the kitchen too much. My inspiration for this stemmed from that and then from enjoying a burrito bowl at Chipotle the other day. I wanted something that would be flavorful after a day at the beach. Also I wanted it ready when we got home since I was sure we’d be a bit drained. I’ll be honest with you, I have never made Barbacoa before. Ever. This, to my surprise, was so easy and the flavors were perfect! We had friends with us at the beach and they came home to eat with us. Everyone was enticed by the smell of the house when we walked in. It smelled amazing!

The taste was not a let down either. It was sort of sweet and sort of spicy — but all around delicious! Definitely something filling but fresh tasting after a day on the beach. I have to say, Chipotle has nothing on me with this burrito bowl!

Sweet Pork Barbacoa Burrito Bowl

Serves: 6
 

Ingredients:

For Barbacoa  
3 – 4 pounds pork butt 
1/2 cup packed light brown sugar 
4 cloves garlic, minced 
1 – 6 ounce can chiptoles in adobo sauce 
1 – 4 ounce can chopped green chiles 
1 medium white onion 
1/4 cup fresh lime juice 
2 tablespoons apple cider vinegar 
3 bay leaves 
1 tablespoon ground cumin 
1 tablespoon dried oregano 
1 tablespoon ground cloves 
2 teaspoons salt 
1 teaspoon black pepper 
  For The Burrito Bowl
1 can black beans, rinsed
1 head lettuce, chopped
2 tomatoes, diced
  sour cream
  salsa
  rice

Directions:

Place pork butt in the slow cooker.

Chop onion into medium sized pieces and add to slow cooker. Add bay leaves as well.

In a food processor combine brown sugar, garlic, chipotles, green chiles, lime juice, vinegar, cumin, oregano, cloves, salt and pepper. Pulse until smooth and blended together.

Pour mixture over meat in slow cooker. Cover and turn to high and let cook for 5-6 hours.

Once meat is cooked, remove from slow cooker and shred. Place back into slow cooker and cover with juices and sauce. Let sit for another 30 min to absorb flavors.

To Assemble Burrito Bowl:
Add lettuce to a bowl. Add cooked rice, beans, tomatoes. Add barbacoa. Top with sour cream and salsa.
