Stuffed Poblanos Wrapped in Bacon

I was a cashier at a supermarket many years ago when living in Austin. It was always interesting to me to see the veggies people brought through the line. I learned a lot about vegetables working there. I made it a goal each shopping trip for almost a year to pick up one that I hadn’t ever had before and try it out. It was a woman who came through my line one day that encouraged me to try the poblano pepper. As I did with many people, I asked her what she was going to do with it. To me it was not making small talk with a customer; I truly wanted to know and get ideas of what to cook. While her stuffed poblano lacked bacon and used A LOT more cheese than mine does, it was delicious all the same. It wasn’t until now that I tried the bacon addition.

As I often do, I test new recipes on friends we have over for dinner. This one was no exception, but testing a recipe on a friend who can’t cook can be iffy. He loved it but to true test was sending some leftovers home with him so his chef boyfriend could try it out too. The next morning word came in that the chef loved them! SUCCESS! When someone who knows how to cook and does it for a living loves leftovers, that is amazing! I must say, Walter and I took the leftovers to work the next day and they warmed up deliciously. While the bacon wasn’t as crispy as it was the night before, the flavors still held! Enjoy these one evening (and maybe the next day too!).

Stuffed Poblanos Wrapped in Bacon

Serves: 4
 

Ingredients:

large poblano pepper cut in half, seeded and ribs removed
medium potatoes
tbsp milk
4 scallions chopped
1 cup Cheddar cheese, shredded
salt and pepper
10 slices bacon, divided
 toothpicks
sour cream to garnish

Bacon Wrapped Poblanos-4

Directions:

Chop 2 slices of bacon into pieces and cook until crisp. 

Peel and boil potatoes. Once boiled and soft, drain and add milk and salt and pepper to taste. Mash or whip until fluffy. Mix in cheese, crisped bacon and scallions. 

Fill each Poblano half with mixture.

Wrap each Poblano with 2 strips of bacon and secure with toothpicks. 

Bake in 425° oven for 35min until pepper is soft and bacon is crispy. 

Garnish with sour cream and a little more cheese.

  3. 3 tbsp milk
  4. 4 scallions chopped
  5. 1 cup cheddar cheese, shredded
  6. salt and pepper
  7. 10 slices bacon, divided
