Sausage and Lentil Stew

I have had these lentils sitting in my pantry for months. I had friends coming over for dinner and wanted to make them up. A look in the fridge brought out some Italian sausage I bought this week and needed to use. What better than to make a nice stew with it. I had all the ingredients on hand, and usually do, so started chopping and looking for other things to put in there.

I can’t take full credit for this. The idea came months ago with a slow cooker recipe I found, but it looked fairly bland, so I took further inspiration from an Italian cookbook I was thumbing through and added an Italian spin to it. During dinner, my guests stopped the conversation just to let me know how great it was. That is when I decided it to add it to Oinkcooking! I hope you enjoy it.

Sausage and Lentil Stew

Serves: 6

Ingredients:

3 tablespoons olive oil
1.5 pound Italian sausage
2 medium onions
6 garlic cloves thinly sliced
2 14.5 oz cans crushed tomatoes
1 pinch grated nutmeg
1 bay leaf
3 tablespoons chopped rosemary
1 dried red chili pepper
3/4 cup red wine
3 cups water
2 cups green lentils

Lentil Stew Ingredients

Directions:

Cut sausages into pieces.
Heat oil in a large saucepan and brown sausages for about 10 minutes making sure all sides are browned.

Remove sausages from the saucepan and set aside. Using the grease from the sausage, add onion and garlic and cook until onions are translucent.

Sauteed Onions
Add the rosemary and tomatoes. Stir everything together and cook on medium heat until it begins to thicken.

Add bay leaf, nutmeg, chili pepper, wine and water. Bring to a boil. Add lentils and sausages and stir well. Cover and simmer for about 45 min, stirring every 10 minutes to make sure the lentils don’t stick to the bottom of the pan. Check that the lentils are cooked through. If not, add a little more water and continue cooking.

Serve.
