Salami Breakfast Bake

Sometimes delicious meals come from having nothing in the refrigerator and taking the few things you have to make a meal. That is how this came about!

I was off work (because I often need a day off just because). It was the end of the week so I hadn’t gone grocery shopping yet. There was NO BACON left. I had no idea what to make. Then I saw the salami in there. I was going to chop it up. Then I remembered years ago when my friend’s mom used to make eggs for me when I lived in Slovenia, and she’d lay salami out at the bottom of the pan. So it began…

I felt it needed cheese also. Fortunately I had some slices of swiss. and then, for color and flavor, from chives out of my garden box. As it was cooking I was so excited over the smell of it. It smelled amazing. When I started to eat it, it took me back to those days in Slovenia. I had to share this flavor with Walter, so the following weekend I remade the for him, and for you guys…you gotta have pictures to look at! I hope you enjoy this different take on breakfast!

Salami Breakfast Bake

Ingredients:

12 slices hard salami, about 2” in diameter  
4 slices of Swiss cheese  
6 eggs  
fresh chives, chopped  
salt and pepper to taste

Directions:

Preheat oven to 350º.

Cover the bottom of a 10” nonstick oven-safe frypan with salami slices. Press down salami to flatten out.

Crack 6 eggs into pan. Break yolks. Make sure egg covers all of pan.

Place slices of cheese over top so it is covering top without overlapping. (break up slices as needed).

Sprinkle chives over top.

Place in oven and cook for 20 minutes.

Remove from oven and release from pan and slide onto place. Cut and serve.
