Quinoa Stuffed Pork Chops

I like to eat fairly healthy. I know, I know, you sometimes can’t tell by what I post on here, but I really do. To me healthy is also cooking from scratch so I know and have control with what is in my food. Quinoa is something I was introduced to years ago. It is nutty in flavor and is considered a superfood by many because of its high protein and low fat content. I like it and wanted to integrate it into a dish. We’ve all seen stuffed pork chops before, usually using stove top stuffing, so here is a tasty alternative — quinoa stuffed pork chops!

I honestly loved the flavor in the stuffing so much that I wished I had made more. So if you want more side dish, double up on the quinoa stuffing and wrap it up in some foil and cook it along side the pork chops.

Quinoa Stuffed Pork Chop

Ingredients:

4 thick cut pork chops
1 cup cooked quinoa
1/2 cup raisins
4 leaves fresh sage, roughly chopped
1/2 cup crushed pecans
2 tablespoons butter
1 medium shallot, chopped
  salt
  pepper
  Dijon mustard
  olive oil

Directions:

Preheat oven to 350° 

Cut pockets into pork chops. 

Melt butter over medium heat. Sauté shallots until tender. Add raisins, pecan and quinoa and toss together coating in remaining butter. Remove from heat and mix in sage. Let mixture cool slightly. 

Spoon mixture evenly into each pork chop. Tie closed with cooking twine. Salt and pepper outside of each pork chop then brush with mustard. 

Add olive oil into a pan heated to medium and sear pork chops on each side 3-4 min. Mustard may char, but that is ok. Remove from heat and place in preheated oven for about 30 minutes or until interior reaches 160°. 

Remove from oven and remove twine from each chop before plating and serving.
