Quick and Easy Chicken Tortilla Soup

I love a good soup. I love a soup that is good and EASY to make. That is why I love this chicken tortilla soup recipe. I’ve been making it for years. It was a friend who made it one night for dinner years ago and literally told me to just dump stuff in and warm it up. It’s been modified through the years and been tweeked to make it what it is here. I promise you will love it! My friends sure do!

Quick and Easy Chicken Tortilla Soup

Ingredients:

1 rotisserie chicken stripped and roughly chopped
2 quarts chicken broth
1 (28-ounce) can petite chopped tomato w/ juice
1 large yellow onion chopped
1 (4-ounce) can green chiles, chopped
2 cloves garlic, chopped
salt
pepper
chili powder (i usually use San Antonio, ancho, or chipotle)
cilantro (finely chopped) 
grated cheese
1 avocado, diced
tortilla chips

Directions:

Bring broth to a boil then reduce to a simmer and season with salt, pepper, and chili powder to taste. 

Add onions and garlic. Simmer until they begin to soften. Once softened, add tomatoes and chilies. Continue to simmer about 15-20 min. 

Add chicken and simmer for another 20-30 min to let chicken absorb flavors. 

Serve topped with crushed chips, cheese, and cilantro.
