Pizza! Two Kinds!

Ok folks! Today is a twofer! (That’s two for one for those of you who don’t know) That means that today we are making 2 kinds of pizza in this one post! I am so excited for this. Not only is it a twofer, but this is a cross-post with my friend Enzo who does a vlog on YouTube called “Son of a Pizza Man“. What does that mean for you? Well, not only do you get to see the lovely pictures of the recipe, but you will get to see me making it as well!

Pizza with Bacon, Sun-dried Tomatoes and Spinach

Ingredients:

1/2 pound bacon, fried crisp
1/2 pizza dough ball, defrosted (if frozen)
1 handful fresh spinach
4 ounces sun-dried tomatoes, soaked in warm water
1 cup gouda cheese, shredded
12 mini mozzarella balls, halved
4 ounces tomato sauce
sprinkle Italian seasoning

Directions:

Preheat oven to 425ºF.

Prepare bacon by chopping into pieces then frying until crispy. Once cooked, drain on a paper towel and set aside.

Preheat a grill pan on stove using medium high heat. Roll out dough into an oval. Place rolled out dough onto grill pan to cook. Check for it to brown and get crispy then flip and do the same for the other side.

Once crust is crisp, place on baking sheet. Add tomato sauce til crust is covered. Sprinkle with Italian Seasoning. Evenly add bacon, tomatoes and spinach to pizza. Sprinkle over shredded gouda cheese then place mozzarella balls evenly over the top. Bake at 425ºF for about 10-12 minutes until cheese is melted and pizza is heated through.

Cut and serve.

Pizzaswith arugula

Pizza with Italian Sausage, Red Onion, Egg and Arugula

Ingredients:

1/2 pizza dough ball, defrosted (if frozen)
2 links fresh Italian sausage
1/2 red onion
2 eggs
1 handful baby arugula
4 ounces tomato sauce
sprinkle Italian seasoning
1 cup pecorino cheese, shredded

Directions:

Preheat oven to 425ºF.

Prepare sausage by removing sausage from casing and browning in a fry pan until cooked through. Once cooked, crumble and drain on a paper towel and set aside.

Cook onion in same pan adding a little olive oil or bacon grease to cook until onion becomes soft.

Preheat a grill pan on stove using medium high heat. Roll out dough into an oval. Place rolled out dough onto grill pan to cook. Check for it to brown and get crispy then flip and do the same for the other side.

Once crust is crisp, place on baking sheet. Add tomato sauce til crust is covered. Sprinkle with Italian Seasoning. Evenly add Italian sausage and red onion over pizza. Top with shredded pecorino cheese. Make 2 craters on each end in the toppings. Crack an egg into each. Bake at 425ºF for about 10-12 minutes until cheese is melted, egg is cooked, and pizza is heated through.

Cut and serve.
