Pineapple Dusk Cocktail

So I had to have Wade back to come up with another cocktail for my bacon infused bourbon. This time he whipped up something a little fruitier. I loved the Pickle Back, but this one was right my alley with some grilled fruit garnishing it.

With the tropical flavor of pineapple two ways (one pureed and one grilled for garnish), and the bacon flavored bourbon, this is a real sensual treat. I hope you enjoy it as much as we have been!

Pineapple Dusk

Ingredients:

fresh pineapple cored and outside cut off  
1 tablespoon bacon grease  
1 ½ ounce bacon infused bourbon  
1 ounce pineapple purée  
splash of orange juice

Directions:

Follow this link to make the Bacon Infused Bourbon.

In bacon grease, saute a sliced round of pineapple for each cocktail until caramelized.

In a blender, puree the rest of the pineapple.

In a shaker with ice, combine bourbon, pineapple puree and a splash of orange juice. Shake well and pour over ice. Add sautéed pineapple as garnish and enjoy.
