Oink Pasta Salad

We had a friend over for dinner the other night. He was going to bring the side. I was cool with that, but he text that he was still at work and didn’t do anything for the side. I told him not to worry, I’d come up with something. Since we were grilling chicken, I thought a summery salad would be nice. I started digging through the pantry and realized I could make an awesome pasta salad. Yeah, I know, my pantry has things in it most people’s don’t, but hey, it’s all in there for moments like these!

I started pulling cans and jars and bags and chopped, boiled, whisked. This is the outcome, a delicious pasta salad that I am dubbing “Oink Pasta Salad” as my signature salad. Yup, it was that good that I am making it a signature Oinkcooking status! Serve it up!

Oink Pasta Salad

Salad Ingredients:

1 package macaroni
1 can artichoke hearts, drained and chopped into quarters
1 red bell pepper, diced
1 cucumber, pealed and diced
4 ounces sun dried tomatoes, chopped and soaked about 15 minutes in water
1 cup small Spanish olives

Dressing Ingredients:

1 cup sour cream
1 cup mayonnaise
1 cup Italian dressing
2 tablespoons seasoned salt
1 tablespoon Italian seasoning
1 tablespoon ground black pepper

Oink Pasta Salad-3

Directions:

Cook macaroni according to package directions. Rinse in cold water. Let cool completely.

Combine all other salad ingredients with cooled macaroni. Mix well together.

Combine dressing ingredients together. Whisk until completely blended together. Pour over salad and mix thoroughly.

Chill in refrigerator at least 2 hours.

Serve cold.
