It’s 2016 and I have to say it is starting with a whole lot of enlightenment. I love writing and cooking for Oinkcooking, however, I was starting to lose my passion for doing it weekly. I could not figure out what was going on. With the new year I was making a pledge to try to eat lighter (I mean, if you’ve watched any of the YouTube videos, I am not a small guy) and eating lighter means cooking lighter too. This was making it harder to come up with new pork dishes that tasted good.
It was after a lot of thought that I decided not to ONLY make recipes for Oinkcooking using pork, but I am going to make all kinds of things that I like to make. I love cooking, period. I cook some pretty damn good food too, and it made me sad that I wasn’t able to blog about there here because my focus was solely on pork and all its goodness. I now change that because, well, it’s my blog and I can do what I want! So here we go! New year, new recipes and many of them will not be pork related…but you are going to LOVE them all the same! Starting with the post tomorrow, it’s gonna change — AND I AM EXCITED ABOUT IT! I hope you are too!
