Mushroom Stuffed Pork Loin

I love stuffing a pork loin. Some will say it is outdated and from the 80’s, but what’s wrong with that? I think they are delicious and present well when having people over for dinner, and when seasoned well, can be full of amazing flavors. So I did it. I make one, like I have so many times before. We had a friend coming over and I wanted to make him something tasty and a little more fancy than I normally cook.

When choosing what to stuff it with I wanted a more earthy flavor so I went with cremini mushrooms and then some fresh spinach. I love the combination of them and with a little fresh garlic added in, it comes out amazing. This will come out so moist it’ll impress anyone!

Mushroom Stuffed Pork Loin

Serves: 6
 

Ingredients:

4 pounds pork loin  
16 ounces of mushrooms  
garlic cloves, pressed  
1 pound spinach  
5 sprigs fresh thyme  
 salt

Directions:

Cut pork loin as if unrolling making cut across the top but not all the way to the other side pulling cut piece away and cutting around

Saute mushrooms in pan. Add fresh thyme and spinach. Drain excess moisture and set aside.

Salt interior of pork loin. Spread pressed garlic inside also. Add mushrooms and spinach mixture. From the inside end, roll up the pork loin. Secure with twine or toothpicks.

Place in a glass baking dish. Bake at 450° for 15 minutes. Reduce oven temperature to 350° and bake 45 minutes more or until a thermometer inserted in center registers 150°. Remove from oven and let rest about 5-10 minutes. Cut into 1 inch slices and serve.
