Meatball Soup

I was sitting at work the other day dreaming of what to make for dinner. It was chilly and rainy out, a perfect night for a hearty soup — a Meatball Soup! I had a small pork butt in the refrigerator I needed to use so I figured it would be perfect to grind up and make meatballs with. I also had fresh chicken stock from a couple nights before I wanted to use since it has so much great flavor. I sat on the train home staring into the rain-filled sky and wrote this up. You’ll see when you watch the YouTube video some additions were made while cooking (and yes, I have added them here) but they just made everything better!

I must say this soup turned out much better than expected. While sitting on the train I contemplated skipping the kale. I didn’t have any at home and really didn’t want to stop at the store. My cooking integrity got to me so I stopped. I am SO glad that I did. The kale gave it some amazing flavor and texture. I had a friend compare it to an Italian Wedding soup, which after looking at it, it did have a lot of the same elements. No matter what you call it, it was a damn good soup! We loved it! I hope you will too!

Meatball Soup

Ingredients:

8 cups chicken stock
6 cups water
2 pounds ground pork
2 eggs
1 cup bread crumbs
1 onion, minced
2 tablespoons parsley, minced
4 large potatoes, peeled and cut into small cubes
5 carrots, peeled and cut into cubes
1 bunch kale, stems removed and chopped roughly
Salt and pepper to taste

Directions:

Combine pork, onion, eggs, bread crumbs and parsley. Place in refrigerator to chill.

Bring chicken stock and water to a boil. Take meat mixture from fridge and roll into small meatballs. Drop into broth as each one is rolled. They will start cooking and float to the top. Once all the meatballs are in the broth, add potatoes and carrots. Salt and pepper to taste. Cover and let boil for 5 minutes then turn to medium low heat and cook for 10 minutes more. Add chopped kale. Cook for 3-5 minutes.

Serve hot.
