Meatball Sliders

I love things on a bun. I had this idea a few months ago and am finally getting around to it. I was tempted to use my regular meatball recipe I shared back in February, but it just didn’t seem right for these. You can use that one if you want, but I made up this combination specifically for sliders.

I was wondering how to make these not be pork burgers made into a ball and put on a bun. I then remembered my Italian friend Chris telling me about his grandmother’s meatballs and how she cooked them right in the sauce. Brilliant! This would definitely give the meatball flavor without having to drown the slider in marinara, making it a mess to eat. I’m so glad he told me that!  Not only are the meatballs amazing, I froze the sauce to use for later because the meatballs flavored the plain tomato sauce deliciously! I hope you enjoy these as much as we did!

Meatball Sliders

Serves: 4

These are delicious and mighty big. For a light eater, one of these is enough.

Yield: 8 sliders  

Ingredients:

1 pound ground pork  
6 slices bacon, chopped  
medium onion, minced  
2 cloves garlic, minced  
1 egg  
1 cup Italian parsley, chopped  
1 cup bread crumbs  
buns for sliders  
asiago fresco cheese sliced thin
2 (15-ounce) cans tomato sauce  
fresh spinach

Directions:

Mix all ingredients together in a bowl combining well. Form into meatballs. 

In a large saucepan, heat tomato sauce. One by one, add meatballs into sauce. Cover. Cook meatballs in sauce, about 30 min until done turning once half way through. 

Place one meatball per bun. Top with a little sauce from the pan, a slice of cheese and fresh spinach leaves.
