Marinated Lemon Chicken Skewers

Last weekend was “Family Dinner” with some friends. It’s where we get together, cook, eat, have some wine and wind down from the week. It was so hot out I didn’t want to cook in the house, so opted for the grill. I made 2 kinds of skewers. This one was the favorite. The marinated lemon chicken skewers are marinated in some delicious and simple ingredients.

Like most delicious recipes, there are not a lot of ingredients. Simplicity always wins in my house! 

These were a hit with everyone and I am sure they will be in your home too. Make sure you marinate them overnight and do these on the grill to bring that slight charred flavor! Make a bunch of them and make it a party!!

Marinated Lemon Chicken Skewers

Ingredients:

1 ½ pounds of chicken breast
red and yellow peppers cut into squares

Marinade ingredients:

¼ cup lemon juice
¼ cup oil
¼ cup water
Pinch of dried crushed red peppers
1 teaspoon salt
1 teaspoon oregano

Marinated Lemon Chicken Skewers-4

Directions:

Mix together marinade ingredients. In blender. Add cubed meat and marinate over night. 

Add meat to skewers alternating with a few slices of peppers. Grill on high flame turning to get char on each side until cooked through. These are small enough so should cook fairly quickly. (so about 2-3 minutes on each side).
