Lemon and Garlic Crusted Pork Rib Roast

Whether you celebrate Easter or are just having dinner with family or friends this weekend, this roast is going to be perfect for it. Spring is here and the flavors in this roast will show that!

I had to go to a butcher shop to get this cut and it was so worth it. If you need to do the same, have the butcher cut off the ribs and tie it back into a roast. You’ll be thankful he did when it comes time to slice it! Wanna make it look a little fancier, have the butcher French the bones.

Lemon and Garlic Crusted Pork Rib Roast

Ingredients:

5 bones pork rib roast
1/2 cup olive oil
2 ounces kosher salt
3 tablespoons fennel seeds, toasted
6-10 cloves garlic, minced
3 lemons, zested
1 1/2 lemon, juiced
1/4 cup scallion, chopped
3 tablespoons cracked black pepper

Pork Rib Roast

Directions:

Preheat oven to 450 degrees

Combine all ingredients (except for the rib roast). Blend together well.

In a roasting pan place rack fat side up on a small wire rack. With your hands, pat ingredient mixture over the whole roast covering all well until mixture is all used up.

Place roast into preheated oven for 15 minutes. After 15 minutes, reduce heat to 325 and continue to roast for 1.5 – 2 hours or until internal temperature on the outside of the racks has reached 160 degrees.

Allow to rest about 10 minuted before cutting.
