Walter’s Lasagna

One of Walter’s specialties is lasagna. He’s always made a great dish and it improved after our trip to Italy (and the many detailed notes we took while eating the food there). One of the things that make this lasagna so amazing is the fresh ingredients used in it especially the fresh homemade pasta noodles. If you are daring enough and have the tools, I highly recommend using them. It is ok if you don’t but it does make a difference.

This is one of the go to dishes when we want to have friends over for dinner. It feeds a lot, and people always love it. When we made it the last time, one half of the couple we had over got stuck at work and never made it. We sent leftovers home for him to enjoy and apparently he never got them! HAHA. His partner ate them before he could. Needless to say, we promised him a redo. We hope you enjoy this dish with your family and friends.

Walter’s Lasagna

Ingredients:

Homemade Pasta Noodles (or 1 box store bought FLAT lasagna noodles)
1-1/2 lb Ground Italian Sausage
4 cups Pink Sauce
1- 8 oz Ricotta
1 cup Parmesan cheese
1 cup shredded mozzarella cheese
1 garlic clove, minced
1 tablespoon olive oil

Directions:

Prepare the noodles and pink sauce ahead of time. There are links about to the recipes for them.

In a frying pan, cook Italian sausage until brown. Add minced garlic and cook until garlic is fragrant. Remove from heat and seat aside.

Preheat Oven to 400 degrees.

Assemble Lasagna

In a 9 x 12 pan, add 1 ladle scoop of sauce in the bottom of the baking pan making sure if coats the bottom of the pan. Lay one layer of noodles along the bottom of the pan. Add more sauce to cover noodles. Sprinkle ¼ cup of Parmesan cheese over sauce. Next, sprinkle a thin layer meat all over. Scoop about 6 – 8 1 tablespoon dollops of ricotta and evenly distribute. Add another layer of noodles and repeat the layers until all ingredients are used (3 – 4 times) Add shredded mozzarella cheese over top.

Cover with foil and bake in oven for 45 minutes. Remove foil and bake for an additional 15 minutes.
