Indian Style Mashed Potato Sandwich

I was working last week and it was around lunchtime and I smelled the most amazing thing. I turned around and a co-worker from India was eating this sandwich. I inquired on what it was, knowing she was vegetarian, and was told it was a mashed potato sandwich. I was intrigued. She started telling me how easy it was to make and started rambling off ingredients. It sounded amazing. I started writing it down. I checked with her a couple of times on what all went into it and some random measurements of “how much” of this and that. This recipe is what came of it.

I made it over the weekend. It was delicious. I didn’t make all the sandwiches so had left over potatoes that I ended up adding into my lunches as a side because they were just tasty. Monday I warmed up my lunch and asked my co-worker to try my potatoes and tell me if I did it correctly. She tasted, smiled, and said “Yes. Those are good. You had turmeric?” HAHA. I had to laugh since I guess it is not normal for a white boy to have a spice like that laying around, but I did. She told me that this is a typical breakfast in her area of India and also that the filling can also be used in samosas. I’m thrilled to share this one with you.

Indian Style Mashed Potato Sandwich

Ingredients:

2 large potatoes 
1 onion, chopped and sautéed 
1 cup peas
2 Serrano peppers, seeded and deveined 
½ cup Cilantro, chopped 
2 tablespoons turmeric
Salt to taste 
Olive oil

Mashed Potato Sandwich-5

Directions:

Peel and Boil potatoes and then mash. Saute onions in a little olive oil. When onions become translucent, add peppers into pan and cook as well. Once both are cooked, add sautéed onions, peas, peppers, cilantro and seasoning. Take mixture and form into patties. Pan fry in hot oil about 2 minutes each side. Place in a roll and grill the sandwich in a sandwich press.
