Grilled Stuffed Portobellos

I saw these portobellos at the store and thought it might be fun to make “burgers” out of them. I had a better idea for them than grilling them into a burger. I stuffed them instead WITH ONLY 4 INGREDIENTS!

I made them for dinner for a friend one Friday night and we all totally loved them! Walter even mentioned how unbelievably filling they were. So get outside, fire up the grill, and get cooking!

Grilled Stuffed Portobellos

Ingredients: 
4 portobellos, cleaned and stem removed
1/2 pound Bacon, chopped and fried up crisp, bacon grease reserved to the side 
6 oz Gorgonzola Blue cheese, crumbled
1 large tomato, seeds removed and diced

Directions: 
Wash off portobellos. Pat dry with paper towel. Brush bacon grease on inside of mushroom. Place facedown on grill. Cool about 6 minutes  

In a bowl, combine crispy bacon bits, Gorgonzola, and diced tomatoes together.

Flip over mushrooms and evenly distribute cheese mixture. Cover grill and let cool another 5-7 minutes until filling beings to melt and mushroom is cooked through. 

Removed from grill and serve immediately.
