Garlic Cilantro Vinaigrette

With the new year starting, Walter and I are working toward eating healthier. Part of my vision of eating healthier is making more things from scratch. I want to know what is in everything we are eating — no added crap like sugar. As part of our goal to eat better, we are incorporating salads more into our diets. We are attempting (I say attempting because it is not true every week) to have one night a week where we enjoy a delicious salad. Part of those salads is to have a great dressing…homemade. This vinaigrette we threw together one night. It was delicious, so delicious we had to share it!

Garlic Cilantro Vinaigrette

Ingredients:

2 cloves garlic
1 handful cilantro, rinsed and excess stems trimmed off
⅓ cup olive oil
⅔ cup apple cider vinegar
1 teaspoon siracha
2 tablespoons lemon juice
pinch of salt
fresh ground pepper to taste

Garlic Cilantro Vinaigrette-3

Directions:

Put all ingredients into blender and blend until smooth. Pour into bottle, cover and refrigerate. Serve over your favorite salad mixture.
