Garlic Rosemary Pork Steak

At the Polish Sausage Shop I visited the other day with my husband and friends, I picked up this amazing pork steak. Not a cut you see often in most supermarkets, but an amazing piece of meat. I lamented on what to do with it. I contemplated marinating it in a honey and soy sauce marinade. Thought I might cover in some pork rub that I had picked up. So many options. I started thinking what I was in the mood for. Like most of us when we are looking for something to cook, I looked in my refrigerator, cupboards, and pantry. I went back to each a few times. I turned to my windowsill and saw my herbs growing. Rosemary — I should use rosemary. I snipped a few sprigs and headed to the fridge again to make sure I had garlic. Heaven was in the making now! I love using fresh things to make a meal. I hope that you will enjoy this as much as we did!

Garlic Rosemary Pork Steak

Ingredients:

1.5- 2 pound pork shoulder steak
2 sprigs rosemary
8-10 cloves garlic
1/4 cup olive oil
  salt

Directions:

Generously salt both sides of the steak.

In a small food processor, add the garlic, rosemary leaves, and olive oil. Chop til fine and mixed.

Take garlic mixture and spread over both sides of the steak. Let marinate on counter about 45 min before grilling or place in a bag and marinate in the refrigerator a few hours. (If you marinate in the refrigerator, remove from refrigerator 30 min before grilling).

Get a grill pan very hot. Place steak on hot grill. Grill first side for 5-6 minutes. DO NOT MOVE. No matter how much you want to check it and move it, DON’T! After the 5-6 minutes passed, flip and grill another 4 minutes until meat is a nice medium to medium-well. Take off heat and let rest on a cutting board. Cut into strips and serve.

This size pork steak should serve about 4 people.

NOTES:

I served this with a boiled potato that I then smashed and fried slightly with some butter. I also added a light kale salad with a citrus vinaigrette.
