Garlic Rice

We went to dinner last weekend to a Peruvian restaurant in our neighborhood. It was a first for me and I have to say, the food was delicious. We will be returning for sure! What really won me over was the garlic rice. It was so simple but so flavorful. I could not get enough of it. I was sure there was not much to it and after some searching online I found the recipe on southamericanfood.about.com. I was so excited to make it! I actually served it with the leg of lamb from last week! It was a great side dish!

If you are tired of just plain rice, do this one for a change. Infusing the garlic with the oil then tossing the rice in coats the rice and distributes the flavor while it cooks. It is amazing! I am so thrilled to share the recipe with you! I really wish I had thought of it myself! Enjoy!!

Garlic Rice

Ingredients:

3-4 cloves of garlic, minced
4 tablespoons oil
1 ½ teaspoon salt
1 cup rice
2 cups water

Directions:

Warm oil in a saucepan over medium heat. Add garlic and cook until garlic becomes translucent.

Add rice and mix well to coat in oil and garlic. Add water and salt and stir. Bring to a boil. Once  water is boiling, turn heat to low and cover. Cook until water is gone (about 15-20 minutes). Fluff with fork before serving.

  1. Good recipe but far too much olive oil. 2 Tb plenty for this. You don’t want it drenched in oil, but kissed is great.

      The great thing is that people can alter to their personal tastes. I don’t find it to be drenched when I make it.
