Easy Slow Cooker Baked Beans

I am so excited to make these! When I was a kid there was a family friend who made the most AMAZING BBQ chicken. He had this huge drum BBQ and would slow-cook and smoke the chicken all day long for a huge group of people. Along-side the awesome chicken were baked beans his wife would make. It has literally been 25+ years since I have had the chicken and those beans, but the flavors will forever be in my memories.

This is my attempt to make the baked beans. We used to call them Barker’s Baked Beans since their last name was Barker. They have passed on in recent years so the recipe was unavailable, but I really think I did this one justice! The flavors are almost exactly how I remember them. She may have used canned baked beans as a base (it was the 70’s and early 80’s) but in my “from scratch” desire, I started them from scratch. I think she would be proud of my efforts here!

Easy Slow Cooker Baked Beans

Serves: 10

Ingredients:

1 pound dried navy beans
1 pound thick-cut bacon slices or slabs
1 large yellow onion, diced
2 1/2 cups water, plus more for soaking the beans
1 1/4 cup ketchup
1/4 cup dark molasses
1/4 cup packed brown sugar
1 tablespoon apple cider vinegar
1 tablespoon dijon mustard
1 tablespoon kosher salt
1/2 teaspoon freshly ground black pepper
1/8 teaspoon ground cloves

Directions:

Sort though beans discarding any bad beans and rocks. Place in bowl and fill with water until water covers beans with an extra 3 inches of water. Soak overnight. 

The next day, drain beans and pour into slow cooker.

Chop up bacon into bit sized chunks. Place into slow cooker.

Dice onion and place in slow cooker.

Combine water, ketchup, molasses, brown sugar, vinegar, mustard, salt, pepper and cloves together in a bowl and wisk together. Pour mixture over beans, bacon and onion that are in the crockpot. Stir together and cover. 

Place on low and cook for 8 hours or high and cook for 5-6 hours.
