Dutch Oven Potatoes with Bacon

We used to have these at every camp out. These are flavors that I only would get in the outdoors. I had a huge craving. Seriously –HUGE. I haven been camping in years ans honestly, I don’t think I’d last more than a night doing it. I might be wrong about that though. Anyhow, in my attempts to enjoy these delicious dutch oven potatoes again without having to go camping to do it or having a big cast iron Dutch oven (I got rid of that years ago) I needed to find a way to do it indoors, at home.

I started by thinking crockpot would be the way to go. Yeah, nope. They weren’t bad by any means, but not the crispy texture that I was wanting. I pulled out the ceramic coated Dutch oven to try it in the oven. I was thrilled with the results. Exactly the flavor I was wanting!  I love these because you can serve it with a nice steak or in the morning with eggs (which is totally what I did with the left overs). Now you don’t have to do these in the oven. Obviously feel free to do it over a campfire!

Dutch Oven Potatoes with Bacon

Ingredients:

6 to 8 medium potatoes  
large onion  
1 pound bacon cut into pieces  
 salt  
 pepper  

Dutch Oven Potatoes-2

Directions:

Scrub potatoes and slice fairly thin (I use a food processor so they are even and it is quick!).

Slice onion to the same thickness as potatoes (again, I put these in the food processor). 

Cut bacon into 1 inch pieces. 

Preheat oven to 425°.

In a cast iron Dutch oven, or a ceramic coated Dutch oven, layer in the ingredients starting with the bacon (this will help it not stick so much at the bottom) onion then potatoes. With each layer add salt and pepper to season. Not a lot! It’s easy to over season these. You can add more later if needed. 

Place lid on and bake for an hour. Check to see if potatoes are cooked through. If not cook longer until potatoes are fully cooked. Once potatoes are fully cooked, remove lid and allow top layer to crisp a little more, about 7-10 minutes. 

Remove from oven and serve. 

You can add cheese and sour cream to the top of these if you’d like. It’s delicious!
