Country Style Pork Rib Poutine

Living in Chicago we are about 45 miles away from Wisconsin. What’s in Wisconsin? Cheese. Lots and lots of cheese! Better yet, CHEESE CURDS! So if you ask anyone from Wisconsin about cheese curds they will tell you how delicious they are and how they need to squeak when you bite into them — it means they are fresh. We are lucky to get some of those Wisconsin dairy farmers down here with their fresh cheese at the farmers market. It was when I saw those curds at the farmers market on Wednesday I knew I had to have them, and what better to make with cheese curds than poutine.

The next challenge was  to figure out what to make with the poutine to make it a meal. I was at the market and saw these big country pork ribs. YES! That was it! Slow cook the pork ribs all day, slather in BBQ sauce and throw it on top of some crisp french fries then throw on those squeaky cheese curds and cover in gravy! O M G! I am hungry for it again! We had our neighbors up to enjoy this. BBQ pork rib poutine with some homemade beers (courtesy of them) and some great conversation. It was a great time! Ok. I need to end this now because I need to go find some curds…and beer! I hope you enjoy this as much as we all did.

Country Style Pork Rib Poutine

Ingredients:

2 pounds country style pork ribs  
2 pounds frozen french fries (or fresh if you want)  
1 bottle bbq sauce  
1 pound cheese curds  
 For gravy  
tbsp butter  
tbsp flour  
4 cups beef or chicken stock

Directions:

For Gravy:
Make roux by adding butter and flour into a saucepan. Let brown a bit. Slowly add stock while stirring (to avoid lumps) and bring to a boil then let simmer about 15-20 min. 

For Ribs:

Salt ribs and Place in crock pot. Cook on high for 5 hours or low for 8 hours. 

Make French fries according to package instructions. (Store bought in the oven are fine or cut your own and make fresh).

For Poutine Assembly:
Layer in a bowl: Fries > cheese curds > rib meat > BBQ Sauce > gravy
