Christmas Pork Loin

Well Merry Christmas everyone! I hope that your year has gone well and that your holiday season has not been too stressful. If there is anything I have learned during the holidays, it’s to organize early, plan things out, get it done early, and relax while everyone else is freaking out! That even goes with Christmas dinner!

I planned a little later than normal this year. I am even adapting a recipe that I found, and honestly, it turned out great. You’ll see in the video that the first time around the meat was chewy, in a way I’ve never had before, so I fixed it and the second round turned out awesome!

Christmas Pork Loin

Ingredients:

1 (2 pound) boneless pork loin roast
1 teaspoon whole cloves
1 apple, sliced into thin rounds
1 (16 ounce) cans whole berry cranberry sauce
1 cup apple cider
½ tablespoon ground cinnamon
½ teaspoon allspice
½ teaspoon ground nutmeg
½ teaspoon ground fresh ginger
1 orange, zest only

Directions:

Preheat oven to 350º.

Place pork loin into a roasting pan or dutch oven.

Push whole cloves into meat (use a knife to stab holes into meat if its tough to get the cloves in).

Lay apple slices over top of the pork loin.

Combine cranberry sauce, apple cider, orange zest, and spices into a bowl and whisk together. Pour over top of pork loin.

Cover and bake for 45 min minutes.

Remove lid and continue baking for another 30-45 minutes.

Remove pork loin to rest before cutting.

Bring the sauce to a boil and reduce down until it thickens.

Slice meat and add sauce over the top to serve.
