Chorizo Migas

It wasn’t until I moved to Texas that I even knew what migas were. I remember the day…we went to brunch with some new friends and after we were planning to hit a museum. We sat down at Kirby Lane in Austin and the chatter around the table was something to the effect of, “What looks good? Do you know what you are going to get?” My buddy says, “I always get migas.” “What are migas?” I ask. His gasp and tone were as if I just asked him something completely obvious (he grew up in Texas so really had no comprehension that people wouldn’t know what this was). As he gasped, he exclaimed, “You DON’T KNOW what MIGAS ARE?!!” Well, I found out, but not at this brunch gathering. I wasn’t sold on them from his description. It was months later I finally tried them and LOVED them!

I was just in Austin this last week and had to get migas for breakfast…a couple times actually. I needed to make sure mine hadn’t become bastardized since my move. They weren’t…too much. I don’t do cheese in mine, which as anyone who know’s Tex-Mex, is a major component of a lot of the food. I added it as optional in the recipe, but I find that cheese gets lost with all the other great flavors in this and who needs the extra fat and calories of something you can’t taste in the end. Chorizo Migas

Ingredients:

5 corn tortillas
1/2 pound fresh chorizo sausage
6 eggs
1 – 4 ounce can green chiles
1/2 onion, diced
1 tomato, diced
  bacon grease or oil to fry with
  cheese, optional

Migas with Chorizo-3

Directions:

Cook chorizo until browned.

Cut corn tortillas into strips. Heat bacon grease or oil in a fry pan over high heat. Fry tortilla strips until crispy. 

Add eggs, chopped tomato, chiles, onions into a bowl and wisk togther.

Once tortilla strips are crispy, pour egg mixture over top and cook, stirring along the way to mix and cook evenly.

Once eggs are cooked, dish up and serve. You can top with cheese, sour cream, cilantro, etc. I like them just as they are.
