Breakfast Pasta

What happens when you have a lot of spaghetti noodles left over from the night before? Breakfast Pasta is what! It was one of those weekend mornings where I was feeling adventurous and needed to clean out left overs from the fridge. This not only turned out amazing the first time I made it, it is now a regular on the weekend breakfast menu!

I guess sometimes the best things come from leftovers! After my friend came over today and exclaimed, “Umm, you need to serve THIS at brunch next time!” I decided it was something to share with everyone on here! I hope it’s as big of hit at your house!

Breakfast Pasta

Serves: 8

Ingredients:

1 package spaghetti
6 strips bacon
6 ounces bulk breakfast sausage
6 eggs, beaten
1/2 cup Parmesan cheese
2 cups fresh arugula or spinach
2 roma tomatoes, seeded and diced
  salt
  pepper

Directions:

Cook spaghetti according to package instructions.

In a large frying pan, brown ground sausage. Remove from pan and set aside.

Add bacon to pan and fry up until crisp. Remove from pan and set aside. Remove majority of the bacon grease from pan.

With remaining bacon grease, saute the arugula (or spinach) until cooked. Set aside.

In the same pan, add cooked spaghetti and beaten eggs. Cook together so that eggs cook onto the pasta. (use tongs to cook with. It is the easiest way to blend the eggs with the spaghetti and cook)

Toss all cooked ingredients together. Add Parmesan cheese and tomatoes. Mix together well. Sprinkle more Parmesan on top. Serve immediately.
