Baked Feta Over Polenta

So here it is…my first official recipe that does not have pork in it! Last summer we were in Greece and ate feta…baked! It was SO delicious, I had to replicate it. I decided to pair it with a simple polenta to make a full meal out of it rather than the appetizer we enjoyed on vacation.

I guess you could cut out the polenta and just bake the feta for a nice little appetizer, but I highly recommend making both. It did turn out delicious. 

Baked Feta

1 pound block of fresh feta
½ teaspoon each: dry oregano, thyme, pepper, paprika blended together
1 roma tomato, sliced

Preheat oven to 350º. Cover a baking sheet in foil.

Cut feta into 4 equal slices. Lay on foil. Evenly distribute tomato slices over the top of the feta slices. Sprinkle herb mixture over top. Wrap in foil.

Bake in oven for 20-25 minutes.

Polenta

1 cup polenta
4 cups water
2 tablespoons butter
¼ cup grated parmesan
salt to taste
¼ cup chopped parsley, fresh

In a medium saucepan, bring water to a boil. Once boiling, add salt and polenta. Whisk until combined. Reduce heat to medium and continue cooking whisking every minute. After 20 minutes, whisk in butter, parmesan and parsley.

Add polenta to plate. Add 1 slice of baked feta to top. Repeat for all feta slices. Serve immediately.
