Bacon Wrapped Stuffed Mushrooms

Sometimes you need an appetizer. Sometimes you want it wrapped in bacon. Sometimes you get exactly what you want and this is one of those times! I had stuffed mushrooms before. I love stuffed mushrooms, but I wasn’t quite sure how these would turn out. I’d never used goat cheese in them and I had never wrapped them in bacon before either. Boy was I silly for never doing that! These turned out great! The bacon was not as crisp as I expected it would be, but thank goodness! It would have crumbled all over if it had been and then you would lose the bacon to the floor and then need to clean your floor!

I think everyone I served them to like them as well. There weren’t any left, so I am taking that as they did!

Bacon Wrapped Stuffed Mushrooms

Ingredients:  
24 mushrooms, washed and stems removed  
12 slices of bacon, cut in half  
4 ounces goat cheese  
1 clove garlic, minced  
1 scallion, greens chopped  
 small handful of parsley chopped  
1 cup bread crumbs  
 toothpicks  

Bacon Wrapped Stuffed Mushrooms-1

Directions:

Preheat oven to 400 degrees. 

Foil the bottom of a rimmed baking sheet and add wire rack inside.

Mix together goat cheese, garlic, bread crumbs, and chopped scallions. Equally spoon mixture into each mushroom. Wrap each mushroom with bacon and secure with toothpick. Place each on wire rack.

Bake for 30 min until bacon begins to crisp. Cool slightly before serving.
