Bacon Wrapped Chicken Cordon Bleu

So I was looking for a little something different to do for the blog this week. I figured I would “cross” meats! Initially I was just going to do a chicken cordon bleu since it has pork deliciously wrapped inside. I was fine with that. The breading on the outside all nice and crispy. Then I go to thinking, instead of breading, why couldn’t I wrap it in BACON? Seriously, the bacon would add an additional flavor profile and make it taste that much more awesome! So I did!

I am so glad that I did it! It brought an extra layer of favor and I think might have helped keep the chicken moist! For the hollandaise, I used a recipe linked in the ingredients that is simple and delicious. It works for me. I like easy!

Bacon Wrapped Chicken Cordon Bleu

Ingredients:

chicken breasts halves, pounded thin  
4 slices black forest ham  
1/2 pound Swiss cheese  
1 pound bacon sliced (12 full slices)  
hollandaise sauce (EASY recipe here: http://www.simplyrecipes.com/recipes/easy_blender_hollandaise_sauce/)  
toothpicks

Directions:

Heat oven to 375°

Cut Swiss cheese into logs long enough to be able to be rolled in the chicken but not so long that it won’t be able to be sealed inside. 

Take pounded out chicken breast and wrap a slice of ham around a log of cheese and place in the middle. Wrap chicken around the cheese so that there are no openings for the cheese to leak out. Seal with toothpicks if necessary. 

Lay out 4 slices of bacon side by side, slightly overlapping. Place the stuffed chicken breast top down on the bacon. Wrap bacon thoroughly around chicken breast. Secure, if needed, with toothpicks or cooking twine.

Repeat process with each breast. 

Place each breast onto a rectangular glass baking dish. Place in preheated oven and bake for 45-50 minutes until chicken is cooked through thoroughly and bacon is crisped. 

Plate and pour hollandaise sauce over top.

Serve hot.
