Bacon Mac and Cheese with Swiss Chard

I love a good Mac and Cheese! I’m American!  It’s almost a cultural requirement! I didn’t grow up with my mom making mac and cheese from a box. She made it from scratch every time. This is soooooo not her recipe though. This is one that I’ve put together over the years; always looking for a better way to make it.

Anyone can change up the cheeses they use. Anyone can add bacon or whatever else they want in it. I chose to add some swiss chard too. Anyone can make an amazing mac and cheese! I am just going to share mine. I encourage you to try this one first, then start switching it up and telling me what you have done! What cheeses did you end up using? Bacon Mac and Cheese with Swiss Chard

Ingredients:

1 pound bacon, cooked and crumbled  
1 bunch swiss chard  
4 ounces Gruyère cheese  
4 ounces pepper jack cheese  
4 ounces sharp cheddar cheese  
½ cup butter or bacon grease after cooking bacon  
 cup flour  
3 cups milk  
1 pound package pasta  
 salt   
 pepper  
 garlic powder  
 olive oil

Directions:

To Prep:
1. Wash and remove stems from chard. Chop roughly into 1 inch pieces. Saute chard in a little olive oil until cooked down. Salt and pepper to taste.
2. Shred all cheeses.
3. Cook and crumble bacon
4. Cook pasta until al dente

To make Mac and Cheese:

Melt butter (or bacon grease) in a pan and slowly mix in flour to create a roux. Stir until it has consistency of wet sand. 

Slowly add milk while stirring to make sure no lumps form and all milk is added and heated up. Do not let boil.

Lower heat to medium and add cheeses to the mix and season to taste with salt, pepper, and garlic powder. Stir until completely melted together, about 5-7 min.

Once cheese sauce is finished, add in cooked pasta, bacon and sautéed chard and toss well together so everything is evenly distributed throughout. 

Serve hot.
